The Breeder's Cup Mac & Cheese

Over 1500 people visited my truck at the Feeder's Cup and said the Mac & Cheese was amazing! Thank you Lexington's Boone Creek Creamery! I used a combination of cheeses from the Creamery to make my Breeder's Cup Mac & Cheese.
Follow the simple recipe below and you can make my Breeders Cup Mac & Cheese at home. The Sassy Redhead is a mild spicy cheddar with whole mustard seed mixed in. The Gruyere gives it a pungent kick that heightens the flavors to make one killer Mac & Cheese!
Breeder's Cup Mac & Cheese
1 pound elbow noodles
1 pint heavy cream
2 cups Sassy Redhead Cheese
1 cup Gruyere
Bring a 5 quart heavy pot of salted water to boil, add noodles and boil for 8-10 minutes, drain.
While waiting for water and noodles to cook. In another heavy 2 quart sauce pan add the heavy cream and stir while bringing to boil. Lower the heat to low and dump in the cheese, stir until melted, some lumps are good, it will add concentrated pockets of extra cheesy bites mixed in!
Sprinkle with the toasted onions and crackers.
